high-temperature-amylase is extracted from fermented deeply bacillus licheniformis.it can freely hydrolyze starch,hepatin and dissolve alpha-1,4 glucose glycosidic linkage which is in substance. this enzyme can resist exemely high heat,and it has been used in beer brewing,alcohol production,producing monosodium glutamate,starch sugar,etc.
